CHRISTMAS TURKEYS !

We've been producing turkeys for Christmas 25 years.  Norfolk Blacks are considered the tastiest breed, a more robust flavour and slower growing than the Bronze or other breeds.  We raise them to ORGANIC standards from Day One here on our Farm.  The only food miles these turkeys see is their daily commute from their overnight perch to a grassy field full of green things to eat; every morning they are keen to dash out of their house and explore the pasture.  They are always curious and quite friendly when anyone has a look over the fence.  They practice flying from a young age, although they never seem to improve their landing techniques beyond the "crash" phase.

The turkeys hatch out in June and are raised on our Farm for the whole of their lives.  They grow slowly, walking and running around every day, exercising their wings, enthusiastically tucking in to whatever they can find - - apples, blackberries, nettles, brassicas, all the different herbs, grass and cereal seeds in our permanent pastures.  The wide range of things to eat, their freedom to exercise and their slow-growing all contribute to their top class flavour.  They are never treated with any antibiotics or pharmaceuticals of any kind - - their healthy lifestyle means they don't ever need such interventions.

In mid-December we pluck and process them individually by hand, and we pack and sell them direct from the Farm, with low-impact packaging.  Most are collected from our Farm or from our Farm Shop in Bristol a day or two before Christmas; a few are sent off by overnight courier to other parts of the country.  They are sold complete with giblets, cooking instructions, and a few recipes for stuffing and making gravy.

The finished and dressed turkeys weigh between 4 and 9 kg; this year's price is about £19.50 per kg, and slightly less for the birds above 7.5 kg.  We have a limited number of turkeys and every year we sell out, so you need to book early.  We ask for a £25 first payment, and the remainder is paid once we have the final weights just before collection time.  We can also provide you with a turkey crown - bone-in, or boneless; and we will have a limited number of turkey legs with thighs.

When you order you can give us an idea of approximately what size you would like.  We'll do our best to match a turkey to your choice, but we can't guarantee the exact weight so you may get a bird that is slightly larger or smaller than requested. Generally speaking we suggest that a 4 to 5 kg bird will comfortably feed 6-7 adults with some leftovers for the next day; and a 6 -8 kg bird will do for 9 -12 people with some left for later.  We always include the giblets for making really good gravy and liver pate  We include some cooking suggestions and recipes that have worked well for very many years.
